
Costa Rica Los Santos Yellow Honey Process - 12oz
This coffee comes from the La Guaria farm, a 1,400 meter, 12-hectare plot of land in Los Santos, Tarrazu.
It's a yellow honey process, which means that 50% of the fruit is left intact during the entire drying phase, imparting body, fruit, and round acidity to some degree. Apolinio, who is his family's patriarch, built Coffee Nace more than a decade ago to process coffee from his family's farms.
Today, his 6 children manage production at Coffee Nace and the farms throughout the harvest season. The Los Santos Yellow Honey offers a creamy tactile mouthfeel with weighty texture and has a profile of buttered toast with cinnamon and sugar. The sweetness is well-rounded, with bittersweet cocoa beneath it and hints of red raisin and dried date as it cools.
This coffee also makes an excellent single-origin espresso, with flavors of chocolate cherry truffle, glazed orange peel, and bittering cacao nibs in the long aftertaste.
